Champs du Lièvre is a domain of 3.5 hectares located at the foothills of the Black Mountain in the small stone village of La Livinière perched equidistant between the medieval city of Carcassonne and Narbonne in Southern France's Languedoc region.

The terroir, naturally unique due to its geographical and geological profile, is home to the prestigious Cru La Livinière denomination that lies at the heart of the larger Minervois appellation. Basking in a sunny Mediterranean climate Champs Du Lièvre's vines all benefit from the Cru La Livinière denomination. Our philosophy is to produce small volumes of high-quality wines that reflect this exceptional terroir.

Champs Du Lièvre grew out of love for the Languedocien landscape and by the serendipitous purchase of a plot of old Cinsault vines with a picturesque view of La Livinière's iconic Roman bell tower, the emblem of the Cru La Livinière appellation. And so, the journey began in 2012 for French-American Nicolle and her Italian husband Duccio.

Terroir

Our varietals of Syrah, Grenache Noir, old vine Carignan and Cinsault thrive in a terroir of Mediterranean aromatic scrubland known as "garrigue." Wild thyme, lavender, juniper and rosemary, alongside holm oak, cypress, pine, fig and olive trees cover the compact stony soil composed of sandstone, limestone, schist and clay, which distinguishes the Cru La Livinière territory called Le Petit Causse.

La Livinière is oriented South/South-East and our vines, ranging from fifteen to over seventy years old, profit from sun-drenched days cooled at nightfall by the breezes sweeping down from the ridges of the Causse which help preserve the natural balance of acidity and freshness ensuring great elegance in the wines.

Organic farming practices in the vineyard

Certified Organic

Champs Du Lièvre is certified 100% organic. Pheromones allow the combat of vine pests without the use of pesticides and "décavaillonnage," inter-vine plowing, helps control weed growth eliminating any use of herbicides while maintaining the biodiversity of the plots. Over 80% of the Cru la Livinière area is committed to agro-ecology.

Artisan Wines

All our grapes are manually harvested at optimal ripeness and sorted directly at the vines. Yields are kept low to ensure concentrated characteristics typical of the terroir. We practice individual plot and varietal vinification in thermoregulated, small capacity stainless steel vats to bring forward the unique specificities of all our vines.

Maceration periods are long producing silky, complex reds. We work with renowned French oak barrel makers to adapt to the potential of each vintage. Our Cru La Livinière and old-vine Carignan wines are barrel aged for a minimum of 15 months before being bottled directly at our winery housed in an 18th century stone building located in the heart of La Livinière.
